Because they can take intense heat well, it allows for roasts that balance the intrinsic wildness with heavy caramelization. Low Temp roasts are light and dry, with notes of vanilla and mild apricot. High Temp roasts pronounce the cocoa powder and heavy body with a walnut finish.
